Finding the time to prepare and cook a homemade meal for the family between work, school, sports and everything else is not an easy task. You want to feed your family a healthy meal but Mc. Donald’s and frozen pizza’s win out more often than you would like to admit.

We understand what it’s like to be pressed for time. That is why we would like to share with you our 5 easy dinner recipes that can be made on any busy day.

5 Fast and Easy Dinner Recipes

1.Chicken and Noodles

Time: 15 Minutes
Serves: 4

Ingredients
12 oz. cooked egg noodles
1 jar (15 oz.) prepared chicken gravy
1 large can (12 oz.) chicken or 2 cups shredded rotisserie chicken

Method
Combine all ingredients in a pan or casserole dish and heat. Stir gently to avoid shredding the noodles.

2.Slow Cooked Pulled Pork Sandwiches

Barbecue Pulled Pork Sandwiches

Prep Time: 15 Minutes
Cook Time: 7-8 hours
Serves: 4

Ingredients
2 lbs. Pork roast
1 onion, thinly sliced
1 can ginger ale, root beer or cola*
1 bottle of barbecue sauce
4 hamburger buns

Method
Place the pork roast in the crock pot and top it with the sliced onions.
Pour the entire can of soda on top.
Cover and cook on low for 7-8 hours, or until the pork is easily shredded.
Drain away all the liquid and shred the pork.
Stir the barbecue sauce into the pork and serve on hamburger buns.
*Do not use diet soda in this recipe.

3.Beef Stroganoff

Prep Time: 30 minutes
Serves:4

Ingredients
1 lb. ground beef
1/2 cup finely chopped onion, or 1 tablespoon dried minced onion
1 can cream of mushroom soup
8 oz. sour cream
Salt and pepper to taste
Cooked egg noodles or rice

Method
Brown the beef with the onion and drain.
Stir the can of cream of mushroom soup into the hot beef mixture and heat just to boiling.
Remove from heat and stir in the sour cream, salt and pepper.
Serve over hot noodles or rice.

 

4.Simple Oven Salmon Cakes

Prep Time: 10 minutes
Cook Time: 15 minutes
Yield: 12 salmon cakes

Ingredients
15 oz. cooked or canned salmon, drained, skinned and deboned
1 1/2 cups bread or cracker crumbs
2 eggs
1/3 cup finely chopped fresh chives or 2 tablespoons dry
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 teaspoon minced garlic
Dash of cayenne pepper

Method
Preheat the oven to 425 degrees.
Lightly grease a muffin tin and set it aside.
Combine all ingredients in a large mixing bowl and stir until very well mixed.
Distribute the salmon mixture evenly into the prepared muffin tins to make 12 salmon cakes.
Bake the salmon cakes for 10-15 minutes, or until the internal temperature reaches 165 degrees.

 

5.Spinach and Artichoke Pizza

Prep Time: 10 minutes
Cook Time: 20 minutes
Serves: 4

Ingredients
Prepared 12-inch pizza crust
Olive oil
1 teaspoon garlic powder
1/2 cup grated parmesan cheese
1 can (8 oz.) artichoke pieces, drained
1 cup fresh spinach
1 1/2 cups shredded mozzarella cheese
1/4 cup cooked and crumbled bacon or pancetta (optional)

Method
Preheat the oven according to the instructions on the pizza crust you are using.
Generously brush the pizza crust with olive oil, then sprinkle it with the garlic powder and parmesan cheese.
Evenly distribute the artichoke pieces and spinach over the crust.
Top with mozzarella cheese and bacon or pancetta.
Bake for 15-20 minutes, or until the cheese is browned and bubbly.
